In July 2019, the DairyCultures team travelled to Khatgal, Mongolia to return the results of our microbiological analysis to the herders who participated in our study. There we hosted the “Seeing Microbes” workshop in partnership with the Blessed by Yak women’s dairy cooperative and the Mongolian Dietetics Association. The aim of the workshop was to directly introduce the herders to the microbiologists and molecular biologists who had been studying their products, and to encourage free discussion and questions. Workshop activities included a demonstration of milking techniques and dairy production, hands-on participation in DNA extraction, exploration of the microscopic world using portable microscopes and Foldscopes, a discussion of the nutritional microbiological content of the herders’ dairy products, and public lectures about the long history of dairying in Mongolia.
